  • 1 cup cold unsalted butter
  • 1/4 cup granulated sugar

  • 1/2 cup warm milk
  • 1/4 cup warm water
  • 1 tablespoon active dry yeast
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup pistachio paste (for filling)
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare yeast mixture by combining warm milk, warm water, and yeast in a bowl. Let it sit for 5 minutes until bubbly.
  2. In a large mixing bowl, combine flours, sugar, and salt. Add the yeast mixture and stir until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in an oiled bowl, cover it with a kitchen towel, and let rise for about 1 hour in a warm place.
  5. While rising, shape cold butter into a rectangle between parchment paper and chill.
  6. Roll out the risen dough into a rectangle; place the chilled butter block in the center and fold the dough over it. Seal edges.
  7. Roll into a long rectangle, fold into thirds like a letter, wrap in plastic, and chill for 30 minutes.
  8. Repeat rolling and folding two more times with chilling after each fold.
  9. Roll out the dough again into a large rectangle; cut triangles and place pistachio paste at the wide end of each triangle.
  10. Roll tightly from the wide end to form croissants.
  11. Place rolled croissants on parchment-lined baking sheets; cover and let rise for another hour.
  12. Preheat oven to 400°F (200°C). Brush croissants with beaten egg for glossiness before baking.
  13. Bake for 20-25 minutes until golden brown; let cool slightly before dusting with powdered sugar.
