  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (28 oz) crushed fire roasted tomatoes
  • 1 can (8 oz) tomato paste
  • 1 can (4 oz) diced green chilies
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • salt, to taste
  • 23 cups chicken or beef broth
  • 6 oz cream cheese, at room temperature
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • avocado and Greek yogurt, for serving

Instructions

  1. Brown ground beef in a skillet over medium heat; drain excess fat.
  2. Chop onions and poblano peppers.
  3. In the slow cooker, combine browned beef, chopped vegetables, spices, crushed tomatoes, hot sauce, and broth.
  4. Cook on low for about 2 hours; stir occasionally.
  5. After cooking, mix in cream cheese and cheddar until melted.
  6. Serve topped with cilantro and green onions.
