  • 3 tablespoons butter
  • 1/2 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Cook the rigatoni in boiling water until al dente; drain and set aside.
  2. In a skillet over medium heat, melt butter and sauté onions until translucent. Add garlic and cook for an additional minute.
  3. Stir in pumpkin puree and sauté for one minute. Add heavy cream and whisk together along with salt, pepper, sage, nutmeg, and brown sugar. Simmer for 2-3 minutes before mixing in parmesan cheese.
  4. Combine the cooked pasta with the sauce until evenly coated.
