Ingredients

  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 1/4 cup loosely packed fresh parsley
  • 3/4 cup olive oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon minced shallots
  • pinch of salt
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 Tablespoon olive oil
  • 23 cups fresh mixed greens

Instructions

  1. Combine all dressing ingredients in a mason jar.
  2. Use an immersion blender to mix until smooth.
  3. Heat your grill to medium-high/high heat. Ensure grates are clean before use.
  4. Lightly brush each slice of pineapple with olive oil.
  5. Sear pineapple directly over flame for about 2 minutes on each side until grill marks appear.
  6. Place corn on the grill and cook for approximately 5 minutes on each side until slightly charred.
  7. Remove grilled pineapple from heat once seared; set aside.
  8. After cooling slightly, cut kernels off the corn cob.
  9. In two salad bowls, fill them with mixed greens as a base.
  10. Add two slices of grilled pineapple to each bowl along with corn kernels, pepitas, blueberries, and sliced avocado.
  11. Drizzle generously with creamy citrus dressing before serving.
