- 1/2 cup fresh squeezed orange juice
- 1/4 cup fresh squeezed lemon juice
- 1 Tablespoon Califia unsweetened almond milk
- 1/4 cup loosely packed fresh parsley
- 3/4 cup olive oil
- 1 Tablespoon rice vinegar
- 1 Tablespoon minced shallots
- pinch of salt
- 4 slices pineapple
- 1 avocado, sliced
- 1 corn on the cob
- 1/2 cup pepitas
- 1 cup fresh blueberries
- 1 Tablespoon olive oil
- 2–3 cups fresh mixed greens
Instructions
- Combine all dressing ingredients in a mason jar.
- Use an immersion blender to mix until smooth.
- Heat your grill to medium-high/high heat. Ensure grates are clean before use.
- Lightly brush each slice of pineapple with olive oil.
- Sear pineapple directly over flame for about 2 minutes on each side until grill marks appear.
- Place corn on the grill and cook for approximately 5 minutes on each side until slightly charred.
- Remove grilled pineapple from heat once seared; set aside.
- After cooling slightly, cut kernels off the corn cob.
- In two salad bowls, fill them with mixed greens as a base.
- Add two slices of grilled pineapple to each bowl along with corn kernels, pepitas, blueberries, and sliced avocado.
- Drizzle generously with creamy citrus dressing before serving.
