  • 1 orange (zest)
  • 125 g unsalted butter (room temperature)
  • 1 tsp vanilla extract
  • 180 g plain flour
  • 75 g dried cranberries (finely chopped)
  • 120 g powdered icing sugar
  • 30 ml orange juice
  • 1 tsp unsalted butter (melted)

Instructions

  2. Cream the butter and orange sugar mixture until light and fluffy; mix in vanilla extract.
  3. Gently fold in the flour and cranberries until combined.
  4. Shape dough into a disc and refrigerate for 30 minutes.
  5. Roll out the dough to about ½ cm thick and cut into desired shapes.
  6. Bake at 170°C (335°F) for 12–15 minutes until edges are golden.
  7. Prepare glaze by whisking icing sugar with orange juice and melted butter; dip cooled cookies.
