Ingredients

  • 1½ cups fresh corn
  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • ⅓ cup crumbled feta cheese

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt until well combined. Set aside.
  2. Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the corn and cook until tender, about 5–7 minutes.
  3. Transfer the cooked corn into a large mixing bowl and let it cool slightly. Add halved cherry tomatoes, finely chopped cucumber, and minced basil into the bowl.
  4. Refrigerate the salad until you're ready to serve. Just before serving, drizzle on the prepared dressing. Sprinkle with crumbled feta cheese if desired.
