- 1½ cups fresh corn
- 1½ cups cherry tomatoes (halved)
- ½ cup cucumber (finely chopped)
- 2 tablespoons fresh basil (minced)
- 3 tablespoons olive oil (divided)
- 1 tablespoon lime juice
- ¼ teaspoon salt
- ⅓ cup crumbled feta cheese
Instructions
- In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt until well combined. Set aside.
- Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the corn and cook until tender, about 5–7 minutes.
- Transfer the cooked corn into a large mixing bowl and let it cool slightly. Add halved cherry tomatoes, finely chopped cucumber, and minced basil into the bowl.
- Refrigerate the salad until you're ready to serve. Just before serving, drizzle on the prepared dressing. Sprinkle with crumbled feta cheese if desired.
