  • 1/2 cup all-purpose flour (for streusel)
  • 1/2 cup brown sugar, packed (for streusel)
  • 1/4 cup unsalted butter, cold and cut into small pieces (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease.
  2. In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. For the streusel: in a small bowl, combine flour, brown sugar, and cinnamon; add cold butter pieces and mix to form coarse crumbs.
  6. Fill muffin cups about two-thirds full with batter and top each with streusel.
  7. Bake for 18-22 minutes or until a toothpick comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack.
