  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and coconut extracts.
  4. Alternately add dry ingredients and coconut milk to the mixture until just combined.
  5. Pour the batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool cakes completely before frosting with whipped cream cheese mixture.
