Ingredients

Scale
  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup unsalted butter (melted)
  • ⅓ cup brown sugar
  • 1 ½ tsp cinnamon
  • ½ cup powdered sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Mix in the egg and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until a smooth dough forms.
  4. Roll out the dough into a rectangle between two sheets of parchment paper.
  5. Prepare the cinnamon filling by mixing melted butter, brown sugar, and cinnamon in a small bowl; spread this over the rolled dough.
  6. Carefully roll up the dough into a log shape and refrigerate for at least 30 minutes.
  7. Slice the chilled log into rounds approximately ¼ inch thick and place on the prepared baking sheet.
  8. Bake for about 10-12 minutes or until edges are lightly golden; let cool on a wire rack.
  9. For the glaze, mix powdered sugar with milk and vanilla extract until smooth; drizzle over cooled cookies before serving.
