  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • ½ cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Marinate the steak: Combine lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and black pepper in a bowl. Add flank steak, coat well, and refrigerate for 30 minutes to 4 hours.
  2. Prepare rice and beans: Cook rice as per package instructions. Heat black beans in a small saucepan for about 5 minutes.
  3. Grill the steak: Preheat grill to medium-high heat. Grill the marinated steak for 4-5 minutes on each side until medium-rare (130°F). Let rest before slicing.
  4. Assemble bowls: Place cooked rice in bowls and top with black beans, corn, cherry tomatoes, avocado slices, red onion, sliced steak, extra cilantro, and lime wedges.
