  • 3 Large Eggs
  • 1 cup Vegetable Oil
  • 1 tbsp Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 2 cups Grated Zucchini
  • 12 oz Semi-Sweet Chocolate Chips

Instructions

  1. Preheat oven to 350ºF and prepare two loaf tins by greasing them.
  2. In a large bowl, whisk together sugar, eggs, oil, and vanilla until well combined.
  3. In another bowl, mix flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg.
  4. Gradually add dry ingredients to wet ingredients; mix until just combined.
  5. Fold in grated zucchini and 8 oz chocolate chips.
  6. Divide batter between prepared tins; sprinkle remaining chocolate chips on top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean. Let cool before slicing.
