Ingredients
- 1 tbsp olive oil
- 1 lb chicken breast, diced
- 2 cups butternut squash, peeled and cubed
- 2 large leeks, cleaned and sliced
- 2 cloves garlic, minced
- 1 tsp thyme (fresh or dried)
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1/2 cup heavy cream or crème fraîche
- 1/2 cup grated Parmesan cheese
- 1/4 tsp ground nutmeg
- 1/2 cup breadcrumbs (optional)
- Cooking spray or butter for greasing
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a skillet over medium heat, heat olive oil and cook diced chicken until no longer pink; set aside.
- In the same skillet, sauté sliced leeks for 5 minutes, then add minced garlic and thyme.
- Stir in cubed butternut squash and cook until slightly golden.
- Return chicken to the skillet, adding chicken broth, heavy cream, nutmeg, and half of the Parmesan cheese; simmer for 2-3 minutes.
- Transfer everything into the baking dish, top with remaining cheese and breadcrumbs if desired.
- Bake for 25–30 minutes until golden brown on top.
- Let rest for 5 minutes before serving.
