  • 1 lb boneless, skinless chicken breast
  • 12 oz chow mein noodles
  • 2 cups shredded cabbage
  • 1 large julienned carrot
  • ½ bunch chopped green onions
  • 2 minced garlic cloves
  • 6 tbsp vegetarian oyster sauce
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp light sesame oil (not toasted)
  • ½ cup chicken broth
  • 1 tbsp cornstarch
  • 1 tbsp granulated sugar

Instructions

  1. Prepare the sauce by whisking together vegetarian oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth, and cornstarch in a small bowl. Set aside.
  2. Cook chow mein noodles as per package instructions until al dente. Drain and rinse with cold water; set aside.
  3. Heat oil in a wok or large skillet over medium-high heat. Cut chicken into bite-sized pieces and cook until golden brown (about 5-7 minutes). Remove from pan.
  4. In the same pan, add more oil and sauté carrots, cabbage, and garlic for about 3-4 minutes until softened.
  5. Return cooked chicken and noodles to the pan. Pour in the sauce and stir well to combine; cook for another 2 minutes until heated through.
  6. Garnish with chopped green onions before serving.
