  • 1 cup fresh cherries, pitted and chopped
  • Ladyfingers

  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate, shaved or grated

Instructions

  1. In a mixing bowl, beat together the mascarpone cheese and heavy cream until fluffy.
  2. Mix in amaretto liqueur, cherry juice, and vanilla extract until well combined.
  3. In another bowl, combine sugar and cherry preserves; add to the mascarpone mixture along with chopped cherries.
  4. Dip ladyfingers briefly in the amaretto-cherry mixture, then layer them in a baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and remaining cream.
  6. Cover and refrigerate for at least 4 hours or overnight before serving.
