Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a greased 9-inch springform pan and bake for 8-10 minutes until golden.
  2. In a large bowl, beat cream cheese until smooth. Gradually add granulated sugar, flour, and vanilla extract while mixing. Add eggs one at a time until just combined.
  3. Pour batter into the crust and bake for 50-60 minutes until center is set but slightly jiggly. Turn off the oven and let cool inside for an hour.
  4. In a skillet over medium heat, melt butter and add banana slices with brown sugar. Cook for 2-3 minutes on each side until golden brown.
  5. Prepare the glaze by simmering vanilla extract, brown sugar, and water in a saucepan for about 2 minutes until thickened.
  6. Once cooled, top cheesecake with caramelized bananas and drizzle with glaze before serving.
