  • 1 onion, chopped
  • 4 oz mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup baby spinach
  • 1 pound penne pasta
  • 1 cup cherry tomatoes, halved

Instructions

  1. In a mixing bowl, coat chicken breasts with olive oil and seasonings (paprika, garlic powder, salt, pepper, cayenne).
  2. Heat a skillet over medium-high heat and sear the chicken for about 6-7 minutes per side until cooked through; let rest before slicing.
  3. In the same skillet, melt butter and olive oil, sauté onion and mushrooms until softened. Sprinkle flour over vegetables, then gradually whisk in milk until thickened; add cream, cheese, and spinach until wilted.
  4. Cook penne pasta in boiling salted water according to package directions; drain.
