- 1/4 cup sugar (for syrup)
- 1/4 cup water
- 1/2 teaspoon almond extract (for syrup)

Instructions
- Prepare the syrup by combining sugar, water, and almond extract in a saucepan over medium heat until dissolved. Let cool.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine softened butter, sugar, almond flour, egg, almond extract, and vanilla extract. Whisk until smooth.
- Slice the day-old croissants in half and fill each with the almond mixture.
