  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • ¾ teaspoon fine sea salt
  • ½ cup water
  • 1 tbsp apple cider vinegar
  • 1 whisked egg
  • 3 cups sliced peaches
  • 3 cups quartered strawberries
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ¼ tsp fine sea salt

Instructions

  1. Prepare the brown butter by melting cold unsalted butter in a saucepan over medium heat until golden brown. Let cool.
  2. In a mixing bowl, combine flour and salt. Gradually add the brown butter and mix until crumbly.
  3. Add water mixed with vinegar until dough forms. Shape into a disk and chill for at least 30 minutes.
  4. For the filling, gently toss sliced peaches and strawberries with sugar, cornstarch, lemon juice, zest, and salt in another bowl.
  5. Preheat oven to 375°F (190°C). Roll out chilled dough and place it in a pie dish.
  6. Pour fruit filling into the crust and sprinkle Turbinado sugar if desired.
  7. Bake for about 70 minutes until bubbly and golden brown. Cool before serving.
