- 7g instant dry yeast
- 40g active sourdough starter
- 3g fine salt
- 165g strong flour
- 385g all-purpose flour
- 70g softened unsalted butter (for dough)
- 130g dark chocolate chips
- 1 egg (for egg wash)
- 2 tbsp sugar + 2 tbsp boiling water (for syrup)
Instructions
- Prepare the vanilla cream by heating milk with vanilla until simmering. Whisk egg yolks with sugar and cornstarch, then gradually add hot milk. Cook until thickened, stir in butter, cover, and chill.
- For the brioche dough, mix warm milk, cream, sugar, and yeast in a stand mixer bowl. Gradually add flours and salt; knead until smooth. Incorporate softened butter and let rise until doubled.
