  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons cornstarch
  • Pinch of salt
  • 2 tablespoons butter, cubed
  • 1 1/2 teaspoons vanilla extract
  • 34 (5×4-inch) croissants
  • 3 ounces semi-sweet or bittersweet chocolate bar, chopped into small chunks
  • 1/4 cup half & half or light cream
  • 1 tablespoon light corn syrup (optional)
  • 34 tablespoons chopped nuts (almonds, pecans, or walnuts)

Instructions

  1. Prepare the pastry cream: In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and mix until smooth. Gradually whisk in light cream and cook over medium heat until thickened. Stir in butter and vanilla, then cool completely.
  2. Slice each croissant horizontally to create pockets and fill them generously with chilled pastry cream.
  3. Make the ganache by melting chopped chocolate with half & half in a heatproof bowl over simmering water until smooth.
  4. Spoon slightly cooled ganache over the filled croissants and let it set for a few minutes.
  5. Optionally, garnish with chopped nuts before serving.
