- 1 pint fresh blueberries
- 2 peaches (diced)
- 2 Persian cucumbers (sliced)
- 3 tablespoons fresh lemon juice
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon finely chopped basil
- Kosher salt and fresh ground black pepper to taste
- 1/2 cup crumbled feta
Instructions
- In a large mixing bowl, combine 1 pint of fresh blueberries, 2 diced peaches, 2 sliced Persian cucumbers, and 1/2 cup of crumbled feta cheese.
- In a jar or measuring cup, whisk together 3 tablespoons of fresh lemon juice, 1 tablespoon of Dijon mustard, 1 tablespoon of honey, 1 tablespoon of olive oil, finely chopped basil to taste, and salt and pepper.
