  • ¼ teaspoon salt
  • 2/3 cup cold butter, cubed
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 4 eggs
  • 8 oz mascarpone cheese
  • 8 oz cream cheese, softened
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 1 and 2/3 cups blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a springform pan with parchment paper.
  2. Mix dry ingredients: flour, baking powder, salt, sugars, and lemon zest in a large bowl.
  3. Blend in cold butter until crumbly. Stir in eggs and vanilla until combined.
  4. Press two-thirds of the mixture into the prepared pan to form the crust; chill remaining crumbs.
  5. In another bowl, combine mascarpone, cream cheese, caster sugar, corn starch, and eggs gently.
  6. Layer half the cheesecake mixture over the crust; sprinkle blueberries on top before adding more cheesecake mixture.
  7. Finish with remaining blueberries and crumbs, then bake for 65-75 minutes until golden brown.
