  • 1 ½ pounds sweet potatoes
  • 14.5 ounces black beans
  • 1 cup red pepper
  • 1 ½ cups green pepper
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • Corn or flour tortillas

Instructions

  1. Preheat the oven to 425°F and grease a large baking sheet.
  2. In a bowl, mix spices (cumin, paprika, garlic powder, onion powder, coriander, salt, and pepper).
  3. Toss sweet potatoes with olive oil and spice mixture; spread on the baking sheet.
  4. Roast sweet potatoes for 20 minutes.
  5. While roasting, coat green and red peppers with remaining olive oil, salt, and pepper.
  6. After 20 minutes, add peppers to the sweet potatoes; roast for another 20 minutes.
  7. Mix together honey, lime juice, and chopped cilantro.
  8. Stir in black beans and corn with roasted veggies; drizzle with sauce.
  9. Return to oven for an additional 10-15 minutes until everything is warmed through.
