  • 1/2 cup butter (melted)
  • 3/4 cup brown sugar
  • 2 eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper or grease it well.
  2. In a medium bowl, whisk together the dry ingredients: flour, granulated sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another large bowl, mix the melted butter with brown sugar until combined. Add eggs and mix well.
  4. Shred zucchini using a box grater; blot excess moisture with paper towels.
  5. Combine the shredded zucchini with dry ingredients gently until just mixed. Fold in optional chocolate chips or nuts.
  6. Pour the batter into the prepared loaf pan and bake for about 60–80 minutes or until a toothpick comes out clean.
