  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, oil (or butter), and vanilla until smooth. Gradually add the dry ingredients until just combined.
  4. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin cups three-quarters full with batter, then top each with cream cheese mixture and swirl gently with a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick comes out clean.
