- 1 tablespoon pumpkin spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 (15 oz) can pumpkin puree
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1/2 cup vegetable oil (or melted and cooled butter)
- 1 tablespoon vanilla extract
- 8 oz cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk (room temperature)
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 375°F and line muffin pan with paper baking cups.
- In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
- In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, oil (or butter), and vanilla until smooth. Gradually add the dry ingredients until just combined.
- In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
- Fill muffin cups three-quarters full with batter, then top each with cream cheese mixture and swirl gently with a toothpick.
- Bake for 18 to 20 minutes or until a toothpick comes out clean.
