  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped
  • Sesame seeds, for garnish
  • Crushed red pepper, optional

Instructions

  1. Heat oil in a large pan over medium heat. Add chicken pieces and cook for about 6 to 8 minutes until golden brown. Remove from pan.
  2. In the same pan, sauté garlic until fragrant. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for about 2 minutes.
  3. Whisk cornstarch with water, then add to the sauce to thicken.
  4. Return chicken to the pan along with pineapple chunks and bell pepper; cook for an additional 3 to 4 minutes.
  5. Stir in cooked rice until heated through.
  6. Garnish with green onions and sesame seeds before serving.
