- 1/3 cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tsp cornstarch
- 1 tbsp water
- 1.5 cups cooked rice
- 1 cup pineapple chunks
- 1/2 red bell pepper, diced
- 1/4 cup green onions, chopped
- Sesame seeds, for garnish
- Crushed red pepper, optional
Instructions
- Heat oil in a large pan over medium heat. Add chicken pieces and cook for about 6 to 8 minutes until golden brown. Remove from pan.
- In the same pan, sauté garlic until fragrant. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for about 2 minutes.
- Whisk cornstarch with water, then add to the sauce to thicken.
- Return chicken to the pan along with pineapple chunks and bell pepper; cook for an additional 3 to 4 minutes.
- Stir in cooked rice until heated through.
- Garnish with green onions and sesame seeds before serving.
