  • 2 pounds russet potatoes
  • 2 cups mayonnaise
  • 3 tablespoons apple cider vinegar

  • Optional: 1 teaspoon sugar

Instructions

  4. For the dressing, mix together one tablespoon of apple cider vinegar, one teaspoon salt, mayonnaise, green onions, diced celery, Dijon mustard, and optional sugar in a small bowl.
  5. Once cooled, gently fold the potatoes into the dressing until evenly coated.
  6. Serve immediately or chill in the refrigerator for one hour for enhanced flavor.
