Ingredients

Scale
  • ½ cup unsalted butter (melted)
  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 2 teaspoons cinnamon (to taste)
  • ¼ teaspoon salt
  • 1 cup flour
  • ½ cup mashed banana (about one medium-large banana)
  • ¼ cup butter (for frosting)
  • 6 tablespoons light brown sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • Dash of salt (for frosting)
  • 1 teaspoon vanilla (for frosting)
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with aluminum foil and spray it with cooking spray.
  2. In a mixing bowl, combine melted butter, light brown sugar, and salt until mixed well. Add the egg, vanilla extract, and cinnamon; mix until fully combined. Stir in the mashed banana.
  3. Gradually add in the flour until just combined. Pour the batter into the prepared pan and smooth out the top.
  4. Bake for 25-30 minutes or until the center is set. Allow cooling in the pan to room temperature.
  5. To make the frosting: Melt butter in a saucepan over medium heat until amber in color, then mix in brown sugar, milk, and a dash of salt; bring to boil and remove from heat. Cool for about 10 minutes before whisking in vanilla and powdered sugar.
  6. Spread frosting evenly over cooled blondies and let it set before slicing into squares.
