  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (thyme, oregano, basil, rosemary)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine Parmesan cheese, dried herbs, smoked paprika, garlic powder, salt, and black pepper.
  3. Toss zucchini wedges in olive oil until coated, then roll them in the Parmesan mixture until well-coated.
  4. Place the coated zucchini fries on the baking sheet in a single layer.
  5. Bake for about 15 minutes until crisp; then broil for an additional 2–3 minutes until golden brown.
  6. Remove from the oven and garnish with chopped parsley before serving warm.
