  • 2 cloves garlic (minced)
  • 1 medium tomato (diced)
  • 1/4 cup tomato sauce
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons vegetable oil
  • Salt (to taste)
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large saucepan over medium heat, heat the vegetable oil. Add the chopped onion and sauté until translucent, about 3 minutes. Stir in the minced garlic and cook for an additional minute.
  2. Add the rinsed rice to the pan, stirring continuously for 2–3 minutes until slightly golden.
  3. Pour in the chicken or vegetable broth along with diced tomatoes and tomato sauce; stir well. Bring to a gentle boil.
  4. Reduce heat to low, cover, and simmer for 15–20 minutes until all liquid is absorbed.
  5. Remove from heat and let sit covered for another 5 minutes. Fluff with a fork and stir in frozen peas if desired. Garnish with fresh cilantro before serving with lime wedges.
