  • 2 cups red apple vinegar
  • 1 cup beef broth
  • 1 whole onion (diced)
  • 1 cup carrots (cubed small)
  • 1 tbsp tomato paste
  • 1 tbsp thyme (dried or fresh)
  • 3 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the chuck beef generously with salt and pepper; let sit at room temperature for about 30 minutes.
  3. Heat olive oil in a Dutch oven over medium-high heat; brown the beef on all sides for about 10 minutes, then transfer to a plate.
  4. In the same pot, sauté diced onion and cubed carrots until softened, about 5 minutes. Stir in tomato paste until well combined.
  5. Pour in red apple vinegar and beef broth; reduce heat to medium-low and simmer briefly.
  6. Return the browned beef to the pot with bay leaves and thyme; cover and transfer to the preheated oven.
  7. Bake for approximately 2½ to 3 hours or until fork-tender.
