  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F and line a muffin tin with paper liners.
  2. In one bowl, mix the crumble topping ingredients: flour, brown sugar, granulated sugar, cinnamon, and melted butter until small clumps form.
  3. In another bowl, whisk together the dry muffin ingredients: flour, baking powder, salt, and cinnamon.
  4. Cream together butter and sugars until fluffy; add eggs, sour cream, and vanilla. Mix until well combined.
  5. Gradually add the dry ingredients and milk alternately until just combined; gently fold in diced apples.
  6. Fill muffin cups three-quarters full with batter and top generously with crumble.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Cool slightly before serving.
