  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • 1¾ cups all-purpose flour
  • Ground cinnamon and allspice

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish by greasing it and lining with parchment paper.
  2. In a sauté pan, reduce the apple cider over medium heat until it measures about ¾ cup.
  3. In a bowl, whisk together eggs, sugars, oil, sour cream, baking powder, spices, and salt.
  4. Combine the reduced cider with the wet mixture before gently folding in the flour until just mixed.
  5. Pour into the prepared dish and bake for 22–25 minutes until golden.
