  • 2 egg yolks

Instructions

  1. Begin by reducing the apple cider in a saucepan over medium heat until only about 2 tablespoons remain.
  2. In a bowl, whip cold cream cheese with sugar and a bit of the cooled apple cider reduction until smooth; set aside.
  3. Cream together softened butter and sugars in a large bowl, then mix in egg yolks and vanilla.
  4. In another bowl, combine dry ingredients (flour, baking powder, spices) and gradually add to the wet mixture.
  5. Preheat oven to 350°F (175°C). Shape cookie dough around spoonfuls of cheesecake filling into balls.
  6. Bake on lined sheets for about 11 minutes until edges are golden.
