  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice

Instructions

  1. Prepare the apple cider reduction by boiling 2 cups of apple cider until it thickens to about 1 cup. Set aside to cool.
  2. Beat together cold cream cheese, granulated sugar, and vanilla extract until smooth for the cheesecake filling; refrigerate.
  3. In a large bowl, cream softened butter with light brown and granulated sugars until fluffy. Add egg yolks one by one, followed by the apple cider reduction and vanilla extract.
  4. In another bowl, whisk flour with baking powder, baking soda, salt, and spices. Gradually incorporate into the wet mixture until just combined.
  5. Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheets, indent each ball, and fill with cheesecake mixture.
  6. Bake for 11 minutes or until edges are golden. Brush with melted butter and sprinkle with spiced sugar while warm.
