- 3 tbsp granulated white sugar
- 1/2 tsp vanilla
- 1/4 cup granulated white sugar
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- pinch ground allspice
Instructions
- Prepare the apple cider reduction by boiling 2 cups of apple cider until it thickens to about 1 cup. Set aside to cool.
- Beat together cold cream cheese, granulated sugar, and vanilla extract until smooth for the cheesecake filling; refrigerate.
- In a large bowl, cream softened butter with light brown and granulated sugars until fluffy. Add egg yolks one by one, followed by the apple cider reduction and vanilla extract.
- In another bowl, whisk flour with baking powder, baking soda, salt, and spices. Gradually incorporate into the wet mixture until just combined.
- Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheets, indent each ball, and fill with cheesecake mixture.
