  • 1 cup almond flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • 2 eggs (room temperature)
  • ¼ cup (50 g) granulated sugar (for simple syrup)
  • 1 cup (240 ml) water
  • 4 tablespoons vanilla extract (alcohol-free)
  • ¼ cup sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Prepare the simple syrup by simmering water and granulated sugar until dissolved; stir in vanilla extracts and let cool.
  3. Mix almond flour, all-purpose flour, salt, and granulated sugar in a stand mixer. Add butter, eggs, and almond extract; mix until light and fluffy.
